Here is a set of recipes that I have found to be good and fairly easy to make. This page is still under construction, so please check back often!
Mediterranean Pasta ...from a now-defunct Mediterranean restaurant in Knoxville, TNIngredients:
0.25 cup olive oil
Large bunch of fresh broccoli
1/2 jar sundried tomatoes (Delallo brand is recommended)
Pasta (Your choice of type, Fideo is recommended)
1 chicken breast (cut into strips, optional)
Fresh garlic (optional)
1 cup orange juice
1/2 cup milk
1/4 cup sugar
1 teaspoon vanilla extract
6-12 ice cubes
Mix all ingredients in a blender and whip until smooth. Makes 3-4 mugs worth.
This works great! Good for when all your family is together. The best part is that no one has to wait for their special omelet. Have each person write their name on a Quart-size Ziploc freezer bag with permanent marker. Crack 2 eggs (large or extra-large) into the bag (not more than 2) shake to combine them. Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, salsa, etc. Each person adds prepared ingredients of choice to their bag and shake. Make sure to get the air out of the bag and zip it up. Place the bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water. Open the bags and the omelet will roll out easily. Be prepared for everyone to be amazed. Nice to serve with fresh fruit and coffee cake; everyone gets involved in the process and a great conversation piece.
Imagine having these ready the night before, and putting the bag in boiling water while you get ready for work. And in 13 minutes, you got a nice omelette for a quick breakfast!

These are the classic fondue ingredients. Recipe from Gourmet Magazine, 1966.
Ingredients:
1 garlic clove, halved crosswise
1 1/2 cups dry white wine (preferably Swiss, such as Fendant)
1 tablespoon cornstarch
2 teaspoons Kirsch
1/2 lb Emmental cheese, coarsely grated (2 cups)
1/2 lb Gruyère, coarsely grated (2 cups)
Accompaniment:
Cubes of French bread and Italian Artisan bread (such as Pugliese)
and chunks of apples and pears on fondue forks.
Special equipment: a fondue pot
Instructions:
Rub inside of a fondue pot with cut sides of garlic, then discard. (garlic, not the pot!)
Add wine to pot and bring just to a simmer over moderate heat. Stir together cornstarch
and kirsch in a cup. Gradually add cheese to pot and cook, stirring constantly in a
zigzag pattern (not a circular motion) to prevent cheese from balling up, until cheese
is just melted and creamy (do not let boil). Stir cornstarch mixture again and stir into
fondue. Bring fondue to a simmer and cook, stirring, until thickened, 5 to 8 minutes.
Serve with bread and apples and pears for dipping.
Yield: About 4 servings
Ingredients:
3 (3-ounce) bars Toblerone
1/2 cup light or heavy cream
2 tablespoons Kirsch or Cointreau
Instructions:
Break the Toblerone into separate triangular pieces. Combine all the ingredients in a saucepan or small
chafing dish. Stir over low heat until the chocolate is melted and smooth. Serve in a chafing dish over low heat.
For dunkables serve each person a plate with one, or a combination, of the following:
Angel food cake or ladyfingers, cut in chunks
Orange or tangerine sections
Sliced strawberries or bananas
Profiteroles or puff pastry
Note: This is purportedly the original recipe for chocolate fondue created in the 1950's at New York's Chalet Suisse Restaurant (no longer in business) by Chef Konrad Egli.
Yield: About 4 servings
This classic Russian dish is easy to make; use frozen chopped onions and pre-sliced mushrooms to speed preparation. To maintain a creamy consistency, be careful not to bring the sauce to a boil once you stir in the sour cream mixture. Serve with rice if you need a substitute for egg noodles.
1 (8-ounce) carton reduced-fat sour cream
3 tablespoons no salt-added tomato paste
1 teaspoon Worcestershire sauce
1/2 cup all-purpose flour
1 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 pounds boneless sirloin steak, cut into (2-inch) strips
1 tablespoon butter
1/2 cup chopped onion
1 (14-ounce) can less-sodium beef broth
2 cups sliced mushrooms
Chopped fresh parsley (optional)
8 cups cooked medium egg noodles (about 7 cups uncooked pasta)
Combine the first 3 ingredients in a bowl and set aside. Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, salt, and pepper in a large zip-top plastic bag. Add beef; seal and shake to coat beef with flour mixture. Melt butter in a large nonstick skillet over medium-high heat. Add onion to pan; sauté 2 minutes or until tender. Add beef and flour mixture to pan; sauté 3 minutes or until beef is browned. Gradually add broth, scraping pan to loosen browned bits. Add mushrooms; cover and cook 5 minutes or until mushrooms are tender. Reduce heat to low; gradually stir in sour cream mixture. Cook, uncovered, 1 minute or until heated (do not boil). Stir in parsley, if desired. Serve over the egg noodles.
Yield: 8 servings (serving size: 3/4 cup beef mixture and 1 cup noodles)
